Rancho Largo Cattle Co

Rancho Largo produces pasture finished (no grain) beef on 14,000 acres of southern Colorado rangeland.  We worked over 25 years to develop grazing practices that drive ecological diversity in the soil and above. Our short grazing events are aimed at feeding soil microbes and cycling carbon, nitrogen, phosphorous and all the minor nutrients. Our long recovery periods, over a year between grazing events, are aimed at allowing native plants to reproduce and flourish. We recently counted over 30 plant species defoliated by our cattle in a graze period. That diversity of plants creates flavor and nutrient density in our beef. The Bionutrient Institute (https://www.bionutrient.org/) recently tested the Omega 6:3 ratio in our beef at 1.4, in the ballpark with fish ratios. We have not forgotten marbling and tenderness. Our Corriente/Angus cross cows are adapted to make a living in wild arid rangelands. We’ve added Belted Galloway and Wagyu genetics for marbling. We also source Angus and Red Angus genetics from selected producers in our neighborhood.
