Yield: 6 servings | Prep Time: 5 minutes | Hands-On Time: 10 minutes

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1/2 tsp Kosher salt
  • 3 cups cubed seedless watermelon
  • 1 cup chopped cucumber 
  • 1 cup crumbled feta (about 6 oz.), or more to your liking
  • 1/2 cup coarsely chopped mint, plus more for garnish
  • 1/2 cup thinly sliced red onion 
  • Flaky sea salt (optional)

Directions

  1. In a small bowl, whisk oil, vinegar, and kosher salt. 
  2. Add watermelon, cucumber, feta, mint, and onion and toss to coat in dressing.
  3. Top with more mint and sea salt (if using).
