INGREDIENTS
- 12 ea Beets, Golden, Small
- 1 qt Apple Cider (or Juice)
- 2 ea Burrata, Fresh, Large
- Taste Rub-A-Dub Seasoning, 5280 Culinary
- Taste Garden Rub, 5280 Culinary
- ¼ cup Apple Vinaigrette or your favorite vinaigrette
- As Needed Parsley, Italian, Chopped
- As Needed Balsamic Glaze, Dark
DIRECTIONS
- Wash Beets and trim off the stalk and roots ends
- Place into a medium sized stock pot and cover with the cider/juice
- Bring to a boil and simmer for 20-25 minutes or until fork tender
- When beets are done and fork tender, turn off the heat and cover the pan for 5 minutes to let the beets finish
- Uncover the beets and using tongs, carefully remove the beets to a cooling rack
- Allow beets to cool for 10 minutes
- Peel the beets and quarter them
- Place beets into a mixing bowl and season with Garden and Rub-A-Dub
- Add ¼ cup of the apple vinaigrette
- Mix well and let sit for 5 minutes
- Place mixed beets on the bottom fo the platter
- Top with the fresh Burrata and garnish with chopped parsley
- DEVOUR!!
