I am Dr. Zach and I have a Ph.D. in Food Science and Technology. I have been working in the food industry for 11 years and I have started my artisan, small batch fermented hot sauces. Hot sauces are an exciting product to make and to eat. What sets us apart from other hot sauce producers is the fact that we use a lacto-fermentation process to lower the pH of the product rather than adding vinegar. What this fermentation process does is add so much flavor and complexity to the final hot sauce. It has a much smoother, rounder finish versus many vinegar based hot sauces (think tabasco). In addition the production, fermentation, and bottling is all done locally in Colorado. We even offer seasonal classics, like roasted Pueblo pepper sauce when they are in season.
