Street Corn Queso

Colorado Proud is all about celebrating the rich flavors and local produce that our beautiful state has to offer. In honor of dairy month, we’re highlighting a dish that’s close to our hearts and taste buds: Street Corn Queso.

Ready Foods have been queso experts since 1972! Their journey began with crafting green chile and queso, and today, they’re proud to say that queso has become our number one seller. What’s the secret? It’s the local Colorado milk, cream, and dairy from local friends at Royal Crest Dairy, combined with a kick of Pueblo peppers, that makes Ready Foods queso the talk of restaurants across the state.

Street Corn Queso

Ingredients

  • 16 oz Queso Blanco (You can find our Queso Blanco at these locations open to the public OR try Stinkin’ Good Queso in the freezer at your local grocery)
  • 1 teaspoon (or more to your liking) Morita Pepper, Ground (Generic chile powder can also be substituted) – For a smoky twist, ground Morita Pepper is our go-to. Feel free to add more for an extra kick!
  • 2 cups Grilled Corn Kernels, Cut off the cob (Bonus points if you can use Colorado-grown Olathe sweet corn!)
  • ¼ cup Cilantro, Chopped
  • 2 Tablespoons Lime Juice
  • Salt to taste
  • Toppings: Cotija cheese, sliced jalapeños

Directions

  1. Heat queso until warmed through.
  2. Stir in the Morita Chile Powder.
  3. Stir in the corn, cilantro and lime juice. Taste adjust spice level with additional chile powder and salt.
  4. Serve with toppings and tortilla chips! We love using locally-made Raquelita’s
